Crockpot Sweet & Sour Chicken

2 lbs boneless skinless chicken breasts, cut into bite-size pieces
1/2 lb baby carrot, sliced
1 whole green bell pepper, seeded and sliced (optional)
1 whole onion, cut into wedges
2 (12 ounce) bottles sweet and sour sauce
  1. Combine all ingredients in crock pot.
  2. Simmer on low setting at least six hours.
  3. Serve over cooked white rice.
