Ranch Chicken Pizza

Fettuccini Alfredo Pizza
from Deals to Meals

1 Pizza dough recipe
1 c. ranch dressing
1 t. garlic cloves, minced
2 t. basil
½ c. shredded Parmesan Cheese
Chicken or sausage
Green onions
Vegetables (Mushrooms, Zucchini, yellow squash, onions, etc.), diced or cut thin
Tomatoes diced small (optional)
Artichokes(optional)
Mozzarella Cheese
Fresh or dried parsley for garnish

Preheat pizza stone at 400 degrees. Roll out crust, or lay pitas on stone. Mix ranch, parmesan, basil and garlic in a bowl. Spread mixture over crust. Sauté meat and vegetables together until soft. Put sauce on dough, put meat mixture on top and then sprinkle with mozzarella cheese. Bake at 400 until golden brown.

Pesto Crostini

Pesto Crostini

  • 1/2 loaf of baguette
  • 2 Tbsp. olive oil
  • 12 cherry or grape tomatoes , halved (about 1 cup)
  • 12 bocconcini (small mozzarella balls), halved
  • 1/4 tsp. kosher salt
  • 4 grinds freshly ground black pepper
  • 1/2 cup pesto (try to find freshly made in the cheese section of the store)
Directions
Heat the oven to 375??. Slice the baguette into 1/2-inch-thick slices. Place on a baking sheet and brush with 1 tablespoon of the oil. Bake until golden and crisp, 10 to 12 minutes.

Once the bread is toasted, smear—dividing evenly—a bit of pesto onto each crostini. Top each piece with one half each of the tomato and bocconcini. Drizzle each with some of the remaining tablespoon of oil and season with the salt and pepper.

Pop back in the oven for 1 minute until heated through.

15 Minute Italian Chicken & Rice with Vegetables

  • 1 teaspoon canola oil
  • 3 ounces boneless skinless chicken breasts, cut into strips
  • 1 medium red pepper, sliced into strips
  • 1 dry cup fresh broccoli florets
  • 1 teaspoon very low-sodium chicken bouillon granules
  • 2/3 cup instant brown rice, uncooked
  • 1 tablespoon Reduced Fat Italian Dressing
  1. HEAT oil in medium skillet. Add chicken; cook and stir until lightly browned, stirring occasionally.
  2. Add vegetables; cook 2 to 3 min. or until crisp-tender.
  3. Stir in bouillon granules and 2/3 cup water. Bring to boil.
  4. Stir in rice and dressing; cover. Reduce heat to low. Cook 5 min. until liquid is absorbed and chicken is cooked through.
  5. Let stand 5 min.

Pasta With Creamy Chicken & Broccoli

12 oz. Spaghetti, uncooked
4 cups Fresh or frozen broccoli florets
1 tablespoon Butter
3/4 lb. Boneless, skinless chicken breasts, cut into thin strips
1/3 cup Chopped onion
1 can (10-3/4 oz.) condensed cream of chicken soup
1/2 cup Milk
1/2 cup Water
1 pkg. (3 oz.) cream cheese, cubed and softened
3/4 cup Grated Parmesan cheese

Preparation

Prep Time: 10 minutes

Start to Finish: 20 minutes

Instructions:

1.Cook pasta according to package directions, adding broccoli to pasta cooking water during last 2 minutes; drain. Meanwhile, in large skillet over medium heat, melt butter; add chicken and onion.

2. Cook 4 minutes or until chicken is no longer pink.

3. In medium bowl, whisk together soup, milk, water and cream cheese until smooth; add to chicken mixture. Heat to boiling; reduce heat to low.

4. Simmer until chicken is thoroughly cooked. Remove from heat; stir in Parmesan cheese.

5. Toss hot pasta and broccoli with sauce.

Makes 9 servings (1 cup each).

Easy Pasta Salad

1 Box Curly Noodles
1 Green Bell Pepper
1 Broccoli Crown
1 Package Sliced Pepperoni
1 lb. Italian Cheese "Crumbles"
Italian Dressing

Directions:
Boil the pasta as directed on box. Slice the green pepper in thin short strips. Cut the broccoli in bite size pieces. Cut the pepperoni slices in halves. Mix the pasta, vegetables, and cheese crumbles in large bowl. Add Italian dressing to taste! You can also sprinkle some parmeson cheese to add texture! Serve cold! ENJOY!

Baked Manicotti

2 c. spaghetti sauce
1 egg, lightly beaten
2 c. ricotta cheese
2 c. shredded mozzarella cheese, divided
1/2 c. grated parmesan cheese
1/4 basil pesto sauce
12 manicotti shells, cooked, rinsed in cold water

Preheat oven to 350° F. Spread 3/4 c. of the spaghetti sauce on bottom of 9x13 baking dish. Mix egg, ricotta, 1½ c. mozzarella, parmesan, and pesto sauce until well-blended. Spoon cheese mixture into large resealable plastic bag. Using scissors, cut off one of the bottom corners of the bag. Fill manicotti shells, one at a time, squeezing cheese mixture into both sides of each shell. Place in baking dish; pour remaining 1¼ c. spaghetti sauce over manicotti. Cover with aluminum foil. Bake 40 minutes or until heated through. The last 5 minutes of cooking, sprinkle more mozzarella cheese over top and remove aluminum foil to allow to melt and brown slightly.

Quick & Easy Pizza Dough

1 Tbl yeast
1 Tbl sugar
1 c warm water
1 tsp salt
2 1/2 - 3 c flour
1 1/2 Tbl oil
1 tsp each spices e.g. oregano, garlic powder, onion powder, garlic salt, Italian seasoning... (optional)

Add yeast to warm water & sugar. Let dissolve and rise until bubbly. Add salt, oil, spices & flour, Mix. Knead until elastic. Let rest. Roll to desired shape. Bake at 450* 10-14 minutes.
