1 1/4 c graham cracker crumbs
2 T sugar
4 T margarine
3 8 oz packages softened cream cheese
1 c sugar
1 T lemon juice
1t vanilla
4 large eggs
1 c sour cream mixed with 2 T sugar and 1 t vanilla
Heat to 350 degrees.
Mix crumbs, 2 T sugar and margarine.
Press into bottom of a springform pan.
Bake 10 minutes. Cool.
Heat oven to 350 degrees.
Beat cream cheese in large mixer bowl.
Add 1c sugar gradually, beating until fluffy.
Add lemon juice and vanilla.
Beat in eggs one at a time, mixing well. Pour over crumb mixture in pan.
Bake until center is firm. (about 50 minutes to 1 hour)
Spread sour cream mixture carefully over the top.
Cool to room temperature. Refrigerate at least 3 hours before cutting.
This freezes well.
