Maple Syrup Pie

Baked pastry shell
2 cups maple syrup
2 tbsp flour
1/2 cup milk
1/2 cup light cream
1 tbsp. butter
Mix flour and maple syrup in a saucepan, add milk, cream and butter. Stir over moderate heat and boil to 105ºC (210ºF). Cool before pouring into baked pastry shell. Cover with a crust, if you like. Bake on lower level of preheated oven, 375ºF until golden, about 30 to 40 minutes.
