Grandma Cutchen's Carrot Cake

Carrot Cake

2 c flour
2 c sugar
2 tsp soda
2 tsp salt
1 1/2 c peanut oil
2 small jars of strained baby food carrots
4 eggs
2 tsp. cinnamon

Mix flour , soda, salt and cinnamon together. Mix the oil and sugar, then the eggs, one at a time. Alternate, adding flour and carrots to the oil, sugar and egg mixture, beating continuously. Pour into 3 (9 inch) cake pans and bake at 325 for about 25 mins. Cool and frost with cream cheese icing

Cream Cheese Frosting
1 box powdered sugar
1 tsp vanilla
stick of butter, softened
8 oz of cream cheese
pinch of salt
1 c chopped pecans

Mix all but pecans together. Add pecans.
